Most vaulted-oven complaints come down to three parts: the thermostat, the door seal and — on gas models — the oven burner and its safety thermocouple. A burner that lights and then drops out after a few minutes is the classic thermocouple sign, and it is a small, inexpensive repair that people often live with for years because they assume the oven is simply getting old.
Calibration is worth mentioning separately. A La Cornue thermostat can be adjusted, and a range that has been moved, re-installed or converted between natural gas and propane very often needs that adjustment rather than any new part at all. It is the first thing we check when the complaint is about how food is turning out.
