Gas Vaulted Ovens

On a gas-fired vaulted oven, the thermostat and burner work together automatically: the flame is designed to ignite and shut off on its own as needed to hold the set temperature, cycling rather than burning continuously. An oven that never reaches its target temperature at all, as opposed to one that simply cycles normally, usually means the burner itself is not producing full heat — a partially restricted orifice, a burner that is not seated correctly after cleaning, or gas pressure that has dropped below what the burner needs to reach its rated output. This is different from the burner lighting and then dropping out completely, which points at the safety thermocouple instead.

Electric Vaulted Ovens

An electric vaulted oven, offered on dual-fuel Château and CornuFé configurations, heats through resistance elements at the top and bottom of the cavity, controlled by a thermostat and a selector switch that chooses which element or elements are active. An oven that will not reach its set temperature on the electric side is more often a weakening heating element — one that still glows or warms but no longer puts out its full rated heat — or a thermostat sensor that is reading the cavity incorrectly and cutting the elements off too early. Because the selector switch also determines whether the bottom element, a baking stone position, or both are active, it is worth checking that the switch is actually set the way you expect before assuming a part has failed; a switch left in the wrong position can look exactly like a weak oven.

Why the Distinction Matters

Gas and electric vaulted ovens use unrelated heating mechanisms, so a problem on one side is never diagnosed by testing the other. Confirming which fuel actually heats your specific oven — some ranges pair a gas cooktop with an electric oven, which surprises owners who assume everything downstairs runs on the same fuel as the burners above it — is one of the first things worth confirming before a visit.

What to Note Before Booking

How far short of the set temperature the oven is running, whether it has always run a little cool or changed recently, and whether the change followed any cleaning, a fuel conversion, or a house move all help narrow the search before a technician arrives.
